  • 1½ cups graham cracker crumbs
  • ¾ cup crushed walnuts or pecans
  • 1 tbsp sugar
  • 6 tbsp unsalted butter (melted)
  • 3 packs (8 oz each) cream cheese (softened)
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 2½ cups blueberries
  • 3 tbsp sugar (to taste)
  • zest and juice of 1 lemon

Instructions

  1. Preheat your oven to 325°F (160°C). Mix graham cracker crumbs, nuts, sugar, and melted butter in a bowl. Press firmly into the bottom of a springform pan to form the crust.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and then eggs one at a time; mix in vanilla extract until combined.
  3. Fold in blueberries gently and pour over the crust.
  4. Bake for about 50 minutes until set but slightly jiggly in the center; cool inside the oven for an hour.
  5. Prepare blueberry sauce by simmering remaining blueberries with lemon juice, zest, and sugar until thickened.
  6. Chill cheesecake for at least four hours before serving with blueberry sauce.
