  • 1 cup fresh parsley
  • 3 cans (14 oz) cannellini beans
  • 4 cups vegetable stock
  • 2 tablespoons olive oil
  • 2 tablespoons nutritional yeast
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. Make the pesto by blending basil, parsley, garlic, almonds, nutritional yeast, and olive oil until smooth.
  2. In a large pot, heat olive oil over medium heat. Sauté onion and celery until translucent.
