  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1 cup mushrooms, sliced
  • 1 cup tomato sauce
  • 1/2 cup Greek yogurt
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C). In a saucepan, boil vegetable broth and add rinsed quinoa. Cover and simmer for 12-15 minutes until liquid is absorbed.
  2. Sauté onion and garlic in olive oil over medium heat until fragrant. Add bell pepper, zucchini, mushrooms, and tomatoes; cook until softened. Stir in spinach and seasonings.
  3. Mix tomato sauce and Greek yogurt in a bowl. Combine cooked quinoa with sautéed veggies and sauce in a large bowl.
  4. Transfer mixture to a greased baking dish. Top with mozzarella cheese and bake covered for 20 minutes; uncover and bake for another 10 minutes until golden.
