  • 2 teaspoons dry instant yeast
  • 1 teaspoon salt
  • 300 ml lukewarm water
  • ½ cup molasses (grape or date)
  • ¼ cup water (for coating)
  • 300 g toasted sesame seeds

  1. In a mixing bowl, combine flour, yeast, and salt. Gradually mix in lukewarm water until a dough forms.
  2. Knead on a floured surface for about 10 minutes until smooth.
  3. Place the dough in an oiled bowl, cover it, and let it rise for about 30 minutes or until doubled in size.
  4. Punch down the dough and divide it into six pieces. Roll each piece into long strands and braid them together.
  5. Preheat your oven to 220°C (428°F). Mix molasses with water in a small bowl.
  6. Dip each braided simit in the molasses mixture and roll in sesame seeds.
