  • 4 (6-ounce) salmon fillets
  • 3 cups baby spinach
  • 5.3 ounces feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup jarred roasted red peppers
  • Olive oil
  • Salt
  • Pepper
  • Italian seasoning
  • Paprika
  • Cayenne pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Carefully slice each salmon piece lengthwise without cutting all the way through.
  3. Brush the salmon with olive oil and season with salt and pepper.
  4. In a pan over medium heat, sauté spinach with Italian seasoning, paprika, cayenne pepper, salt, and pepper until wilted.
  5. Stir in chopped roasted red peppers and both cheeses until well combined.
  6. Stuff the spinach-feta mixture into each salmon fillet.
  7. Bake for 12-17 minutes or until cooked to your liking.
