  • Salt and pepper
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sun-dried tomatoes
  • 1 teaspoon garlic powder

Instructions

  1. Sauté spinach in a skillet until wilted. Combine with ricotta, mozzarella, sun-dried tomatoes, garlic powder, salt, and pepper in a bowl.
  2. Butterfly the flank steak by cutting horizontally through its thickest part. Open it like a book and pound it flat for even thickness.
  3. Spread the filling evenly on one side of the steak, roll tightly from one end to the other, and secure with twine or toothpicks.
  4. Preheat oven to 375°F (190°C). Sear each side of the rolled steak in a skillet for 3-4 minutes until golden brown. Transfer to a baking dish.
  5. Bake for about 25-30 minutes until internal temperature reaches 145°F (63°C). Let rest for 10 minutes before slicing.
