  • 1 tablespoon honey
  • 2 eggs
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1/2 cup lemon juice
  • 1 cup sugar
  • 1/4 cup lemon zest (about 2 lemons)
  • 6 tablespoons unsalted butter, cubed
  • Pinch of coarse salt

Instructions

  1. Prepare the pie crust by mixing flour, salt, and sugar; then incorporate chilled butter until crumbly. Add vanilla and cold water to form dough. Chill for 30 minutes.
  2. Preheat oven to 350°F (175°C). Roll out the dough and fit it into tart pans; bake for 15 minutes until golden.
  3. For the custard filling, whisk together yogurt, honey, eggs, sugar, and vanilla; pour into baked crusts and bake for another 25 minutes.
  4. For lemon curd, whisk eggs with lemon juice and zest in a saucepan; cook over low heat until thickened. Pour over cooled custard tarts.
  5. Chill before serving to meld flavors.
