  • 1 cup vanilla yogurt
  • 1 tablespoon honey
  • 2 eggs
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1/2 cup lemon juice
  • 1 cup sugar
  • 1/4 cup lemon zest (about 2 lemons)
  • 6 tablespoons unsalted butter, cubed
  • Pinch of coarse salt

Instructions

  1. Preheat oven to 375°F (190°C) and prepare the pie crust by mixing flour, salt, sugar, and butter until crumbly. Add vanilla extract and cold water to form dough. Chill for 30 minutes.
  2. Roll out the dough, fit into tart pans, prick bottoms with a fork, and bake for about 20 minutes until golden brown.
  3. For the custard filling, whisk together yogurt, honey, eggs, sugar, and vanilla. Fold in strawberries gently.
  4. Pour filling into cooled tart shells and bake for another 20 minutes until set but slightly jiggly.
  5. Prepare lemon curd by whisking eggs, lemon juice, sugar, zest, and salt over low heat until thickened; stir in butter until smooth.
  6. Let tarts cool completely before drizzling with lemon curd.
