  • 20 to 22 ounces super firm or firm tofu
  • 2 tablespoons canola or vegetable oil
  • 1 cup full-fat canned coconut milk
  • 2 tablespoons sambal oelek (adjust for spice level)
  • 4 teaspoons red curry paste
  • 1 cup thinly sliced shallots
  • 2 tablespoons minced ginger

Instructions

  1. Prepare the tofu by patting it dry and cutting it into 1-inch cubes.
  2. Heat oil in a non-stick pan over medium-high heat and fry the tofu until crispy on all sides, about 3 minutes per side.
