  • 2 1/2 pounds boneless skinless chicken thighs
  • 3 tablespoons soy sauce
  • 6 tablespoons honey or maple syrup
  • 1 teaspoon lime zest
  • 3 tablespoons fresh lime juice
  • 4 garlic cloves
  • 1 1/2 tablespoons grated fresh ginger
  • 1 tablespoon vegetable oil
  • 1 1/2 tablespoons sriracha sauce

Instructions

  1. In a bowl, whisk together soy sauce, honey/maple syrup, lime zest, lime juice, minced garlic, ginger, vegetable oil, sriracha, and salt.
  2. Marinate chicken in half of the mixture for at least 30 minutes (or up to 12 hours in the fridge). Reserve remaining marinade for basting.
  3. Preheat grill to medium-high heat. Skewer marinated chicken pieces and pat dry.
  4. Grill chicken skewers for about 9-12 minutes until golden brown and cooked through (internal temperature should reach 160°F).
  5. Baste with reserved marinade during grilling and let rest before serving.
