  • 1/2 cup mayonnaise
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 1 tablespoon lime juice
  • Salt to taste
  • 4 burger buns, toasted
  • 4 slices of pepper jack cheese (optional, for extra heat)
  • Lettuce leaves
  • Sliced tomatoes
  • Sliced red onions
  • Pickled jalapeños (optional, for extra spice)

Instructions

  1. In a mixing bowl, combine ground chicken, chipotle peppers, adobo sauce, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, lime juice, breadcrumbs, and egg. Mix until well blended.
  2. Divide the mixture into four equal portions and shape them into burger patties.
  3. For grilling: Preheat the grill to medium-high heat and lightly oil the grates. Place patties on grill; cook for about 5 minutes per side until they reach an internal temperature of 165°F (75°C). For stovetop: Heat a large skillet over medium heat with a drizzle of oil. Cook patties for 5–6 minutes per side until golden brown and fully cooked.
  4. In a small bowl, mix together mayonnaise with chopped chipotle pepper, lime juice, garlic powder, and salt until smooth.
