  • 1 1/2 cups flour
  • For frosting: 8 oz reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 teaspoons lemon zest

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, whisk together eggs, brown sugar, canola oil, honey, and vanilla until mixed.
  3. Fold in grated carrot, zucchini, and walnuts.
  4. In another bowl, combine flour, baking powder, ground ginger, and baking soda; add to wet mixture until just combined.
  5. Pour batter into prepared pan and bake for approximately 25 minutes or until a toothpick comes out clean.
  6. For frosting, beat together cream cheese, icing sugar, and lemon zest until smooth.
