2 cans (6 oz each) salmon (or 12 oz cooked fresh salmon)
½ cup breadcrumbs
1 large egg
¼ cup finely chopped onion
2 tablespoons fresh parsley
½ cup plain Greek yogurt (or mayonnaise)
Fresh lemon juice and zest
Garlic clove
Instructions
In a large bowl, combine flaked salmon, breadcrumbs, egg, onion, parsley, garlic powder, onion powder, salt, pepper, paprika, Dijon mustard, mayonnaise, and lemon juice. Mix well.
Shape the mixture into small patties (about 2–3 inches wide).
Heat olive oil in a skillet over medium heat and cook the patties for 3–4 minutes on each side until golden brown.
For the sauce, whisk together Greek yogurt (or mayonnaise), lemon juice, lemon zest, minced garlic, honey (if using), Dijon mustard, salt, and pepper.
