  • 1/4 cup (55 g) unsalted butter, room temperature
  • 3 tbsp rosewater
  • 60 g freeze-dried raspberries
  • 1/2 cup (50 g) powdered sugar for dusting

  1. Crush the freeze-dried raspberries in a food processor until finely ground.
  2. In a microwave-safe bowl, melt the white chocolate and butter in 30-second intervals until smooth, stirring after each interval.
  3. Mix in the crushed raspberries and rosewater until well combined. Cover with cling film and chill in the refrigerator for 2-3 hours or overnight.
  4. Once chilled, scoop out tablespoon-sized portions and roll into balls. Coat each truffle in powdered sugar.
  5. Refrigerate for another 30 minutes before serving.
