  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • Fresh thyme and rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix olive oil, garlic, herbs, orange zest, juice, honey, soy sauce, Dijon mustard, salt, and pepper.
  3. Pat dry the chicken and rub the marinade inside and out; marinate for at least 30 minutes.
  4. Place quartered onions in a roasting pan; set the chicken on top and pour broth around it.
  5. Roast for about 1 hour 15 minutes until internal temperature reaches 165°F (75°C), basting occasionally.
  6. Let rest for 10 minutes before carving; serve warm with your favorite sides.
