  • 2 heads garlic
  • Olive oil
  • Kosher salt
  • ¾ lb raw sliced bacon
  • ¼ cup freshly squeezed lemon juice
  • 1 tbsp Dijon mustard
  • 3 anchovy fillets (drained)
  • ½ cup grated Parmesan cheese
  • 1 bunch lacinato kale (rinsed and dried)
  • ½ lb crusty Italian bread (torn into pieces)
  • 3 hearts of romaine (rinsed and dried)

Instructions

  1. Preheat oven to 300°F. Cut tops off garlic heads, drizzle with olive oil, season with salt, wrap in foil, and roast for 2 hours until soft.
  2. Increase oven to 425°F. Lay bacon on a baking sheet and roast for 20-22 minutes until crispy; drain on paper towels.
  3. In a food processor, blend lemon juice, Dijon mustard, anchovies, and roasted garlic until smooth. Gradually add olive oil while processing to create the dressing.
  4. Slice kale into strips and massage with dressing in a mixing bowl for about 30 seconds; let sit for 10 minutes.
  5. Toast torn bread pieces in a skillet over medium heat with olive oil until golden brown.
  6. Combine sliced romaine with kale and remaining dressing; toss gently before adding bacon and croutons.
  7. Serve topped with shaved Parmesan cheese and extra black pepper.
