  • 1 small onion, finely chopped
  • 1 small bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Creole seasoning
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Pat the red snapper fillets dry and season both sides with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the seasoned fillets for 3–4 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, reduce heat to medium and melt butter. Add onion and bell pepper; cook until softened (4–5 minutes). Stir in garlic and Creole seasoning; cook for another minute.
  4. Pour in chicken broth and diced tomatoes (if using), then simmer for 2–3 minutes. Finally, stir in heavy cream and simmer until slightly thickened (about 5 minutes).
  5. Return cooked snapper to the skillet, spoon sauce over top, warm through for 1–2 minutes, garnish with parsley, and serve.
