  • 3 large Eggs
  • ½ cup Lemon Juice (freshly squeezed)
  • 1 tablespoon Lemon Zest
  • 1 cup Raspberries (mashed)
  • 2 tablespoons Cornstarch
  • 2 tablespoons All-Purpose Flour
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust, combine 1½ cups of flour, ½ cup powdered sugar, and ¼ teaspoon salt in a mixing bowl. Add ¾ cup cold, cubed butter and mix until crumbly. Press into a greased 9×9-inch baking pan and bake for 15 minutes until lightly golden.
  3. For the filling, whisk together 1 cup granulated sugar, 3 eggs, ½ cup lemon juice, and 1 tablespoon lemon zest. Stir in 1 cup mashed raspberries, 2 tablespoons cornstarch, and 2 tablespoons flour until smooth.
  4. Pour the filling over the pre-baked crust. Bake for an additional 25 minutes or until set. Let cool before cutting into squares.
