  • 2 heaping tablespoons cornstarch mixed with 3 tablespoons water
  • 3 tablespoons milk
  • 3 tablespoons raspberry syrup
  • 3 drops red food coloring (optional)
  • 1/2 cup frozen raspberries (chopped into tiny pieces)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together gluten-free flour, cornstarch, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until fluffy. Mix in milk, raspberry syrup, food coloring, and cornstarch mixture until smooth.
  4. Gradually combine the dry ingredients into the wet mixture; gently fold in frozen raspberries.
  5. Scoop dough onto the prepared baking sheet with space between each cookie.
  6. Bake for about 15 minutes or until edges are lightly golden. Cool on a wire rack.
