  • 2 cups all-purpose flour
  • 1 tsp dry yeast
  • 1 tbsp sugar
  • 1/2 tsp baking powder
  • 1 tbsp dry powdered milk
  • 1 3/4 cups warm water
  • Oil for frying
  • 2 cups sugar (for syrup)
  • 1 cup water (for syrup)
  • 1/4 cup honey (for syrup)
  • 1 tsp lemon juice (for syrup)
  • A dash of vanilla powder or 1/2 tsp vanilla extract (for syrup)
  • Nut mixture of your choice (for filling)

Instructions

  1. In a mixing bowl, combine flour, yeast, sugar, baking powder, powdered milk, and salt. Gradually add warm water while whisking until smooth. Let rest for 30 minutes.
  2. Heat a non-stick frying pan over medium heat. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form (about 2-3 minutes).
  3. Place a spoonful of nut mixture in the center of each pancake, fold in half, and seal.
  4. Heat oil in a deep pot over medium heat. Fry filled pancakes until golden brown on both sides.
  5. For syrup, combine sugar, water, honey, lemon juice, and vanilla in a saucepan; boil then simmer until slightly thickened.
  6. Serve warm Qatayef drizzled with syrup.
