  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/3 cup vegetable oil
  • 1/2 cup creamy peanut butter
  • 2/3 cup brown sugar
  • 1/3 cup honey
  • 2 large eggs
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups shredded zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate medium bowl, mix the vegetable oil, peanut butter, brown sugar, honey, eggs, milk, and vanilla until smooth.
  4. Combine wet ingredients with dry ingredients; stir until just mixed. Gently fold in zucchini and chocolate chips.
  5. Pour batter into the prepared loaf pan and bake for 55–70 minutes, covering with foil halfway through if necessary. Check doneness with a toothpick.
  6. Allow to cool in the pan for an hour before transferring to a wire rack to cool completely.
