  • 1 ½ tbsp Avocado Oil
  • 2 ½ lb Pork Tenderloins
  • 1 tsp Salt
  • ½ tsp Pepper
  • ¼ cup Yellow Onion (thinly sliced)
  • 1 tsp Fresh Rosemary (minced)
  • ⅓ cup Brown Sugar
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Dijon Mustard
  • 3 Large Peaches (pitted, peeled, and diced)

Instructions

  1. Preheat the oven to 375℉. Heat avocado oil in a heavy-bottomed skillet over high heat. Season pork tenderloins with salt and pepper.
  2. Sear the pork on each side for about 3–4 minutes until browned. Remove from pan and reduce heat to medium-low.
  3. Sauté onions and rosemary in the same skillet for about 1 minute until golden.
  4. Add brown sugar, apple cider vinegar, Dijon mustard, and diced peaches; stir to combine.
  5. Return the pork to the skillet with the glaze and bake for about 10 minutes until the internal temperature reaches 145℉.
  6. Let rest for 5–10 minutes before slicing; serve topped with peach glaze.
