  • 4 pounds multi-colored rotini pasta
  • 64 ounces Italian dressing
  • 2 teaspoons Kosher salt
  • 1 teaspoon black pepper
  • 32 ounces mozzarella cheese, cut into small cubes
  • 40 ounces cherry tomatoes, halved
  • 3 green bell peppers, diced
  • 3 red bell peppers, diced
  • 36 ounces sliced black olives, drained
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine half of the cooked pasta, half of the Italian dressing, salt, and pepper. Mix well.
  3. Add half of the mozzarella cheese, cherry tomatoes, bell peppers, and black olives; stir to combine.
  4. Repeat with remaining ingredients until thoroughly mixed.
