  • 2 cups fresh strawberries, hulled and chopped
  • ¼ cup granulated sugar (for topping)
  • 1 tablespoon lemon juice

Instructions

  1. Combine graham cracker crumbs and sugar in a bowl; stir in melted butter until well mixed. Press into the bottom of a square baking dish and refrigerate.
  2. In another bowl, beat cream cheese until smooth; gradually add powdered sugar and vanilla while mixing. In a separate bowl, whip heavy cream to stiff peaks and gently fold into the cream cheese mixture. Spread over the crust.
  3. For the topping, heat chopped strawberries with sugar and lemon juice in a saucepan until syrupy. Cool slightly before pouring over cheesecake layer.
  4. Refrigerate for at least 4 hours or overnight before slicing into bars.
