  • 3 & 1/2 cups Biscoff cookie crumbs
  • 12 tablespoons unsalted butter
  • 2 blocks cream cheese
  • 1 cup Biscoff creamy cookie butter
  • 1 & 1/2 cups heavy whipping cream
  • Powdered sugar
  • Vanilla extract

Instructions

  1. Prepare the crust by mixing Biscoff cookie crumbs, brown sugar, and melted butter in a bowl. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese, powdered sugar, and cookie butter until smooth. Mix in vanilla.
  3. Whip cold heavy cream until stiff peaks form and fold gently into the cream cheese mixture.
  4. Pour half of the filling over the crust, drizzle with half of the remaining cookie butter, then add the rest of the filling.
  5. Cover and refrigerate for at least 6 hours or overnight before serving.
