  • 1 ½ cups graham cracker crumbs
  • ½ cup melted butter
  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup diced apples (Granny Smith preferred)
  • ½ cup caramel sauce
  • ½ cup brown sugar
  • 2 tbsp butter
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until it resembles wet sand. Press firmly into muffin tin cups to form crusts.
  3. In another bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Fold in diced apples and pour the filling over each crust until nearly full.
  5. Bake for 20-25 minutes until set but slightly jiggly in the center.
  6. While baking, melt butter in a skillet and sauté diced apples with brown sugar and cinnamon until caramelized.
  7. Once cooled, top each cheesecake bite with caramel sauce and sautéed apples.
