  • 2 cups heavy cream
  • 1 cup whole milk
  • 0.5 cup granulated sugar
  • 1 vanilla bean (or 2 tsp pure extract)
  • 2.5 tsp unflavored gelatin
  • 2 ripe mangoes
  • 2 tbsp sugar (for mango layer)
  • 1 tsp lemon juice

Instructions

  1. Lightly grease molds or ramekins and place them on a tray.
  2. Bloom gelatin in cold water for about 5–10 minutes.
  3. In a saucepan, heat cream, milk, sugar, vanilla, and salt until simmering. Remove from heat and whisk in bloomed gelatin until dissolved.
  4. Pour the cream mixture into prepared molds and chill for about 4 hours until set.
  5. Puree mangoes with sugar and lemon juice; strain to remove fibers.
  6. Bloom additional gelatin in cold water, then dissolve it in heated mango puree before mixing with remaining puree.
  7. Pour the mango layer over the set cream layer and chill for another 2 hours.
  8. Garnish with fresh mint or coconut flakes before serving.
