  • 2 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 4 tablespoons chopped fresh basil
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1 cup grated mozzarella cheese (divided)
  • 1/2 cup coarsely grated Parmesan cheese (plus extra for topping)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 350°F (180°C) and grease an 8" x 8" or 8" x 11" baking dish.
  2. In a mixing bowl, toss together sliced zucchini, yellow squash, basil, garlic powder, salt, pepper, and cheeses (reserve some mozzarella).
  3. Spread the mixture evenly in the baking dish and bake uncovered for 25-30 minutes until tender.
  4. Remove from the oven and top with remaining mozzarella and optional Parmesan. Bake for an additional 10-15 minutes until the cheese is melted and golden.
  5. Let cool slightly before serving.
