  • 2 chicken breasts, cubed
  • 1 lb potato gnocchi
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare your ingredients: Cube the chicken, halve the tomatoes, and measure out the gnocchi and liquids.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then cook until golden brown (5–7 minutes). Remove from skillet.
  3. In the same skillet, sauté garlic for 30 seconds, then add tomatoes and cook for an additional 2 minutes.
  4. Pour in chicken broth and bring to a simmer. Stir in heavy cream, lemon zest, and juice (briefly remove from heat to avoid curdling).
  5. Add gnocchi and cook for about 3–4 minutes until tender. Stir in spinach just before finishing cooking.
  6. Return chicken to the skillet, season to taste, garnish with fresh herbs, and serve.
