  • 2 ¼ teaspoons instant yeast

  • ¼ cup olive oil
  • 16 ounces frozen spinach (thawed/drained)
  • ¼ cup parsley (chopped)
  • 1 medium onion (diced)
  • 2 tablespoons lemon juice
  • 1 tablespoon sumac

  1. Combine flour, salt, sugar, yeast in a mixing bowl.
  2. Gradually add warm water and olive oil; knead until smooth.
  3. Let the dough rise for about an hour.
  4. Sauté onion in olive oil; add spinach, parsley, lemon juice, sumac, and salt.
  5. Preheat oven to 375°F (190°C). Roll out dough; cut into circles.
  6. Fill each circle with a tablespoon of filling; fold and seal edges.
