  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 2 large eggs
  • ½ cup breadcrumbs
  • 1 Tbsp oil

Instructions

  1. Preheat your oven to 400°F (204°C). Halve the bell peppers lengthwise and remove seeds.
  2. Place the pepper halves cut-side up on a parchment-lined baking sheet and brush with olive oil. Bake for about 20 minutes until softened.
  3. In a microwave-safe bowl, wilt the spinach (15-30 seconds), then combine it with ricotta, mozzarella, parmesan, green onions, basil, eggs, and seasonings in a mixing bowl.
  4. Fill each pepper half generously with the ricotta mixture.
  5. Top with breadcrumbs mixed with oil and bake at 350°F (176°C) for another 30 minutes until golden brown.
