  • 1 chocolate cake (9 inches), baked and cooled
  • 1 cup fresh raspberries
  • 2 tbsp sugar
  • 1 tsp gelatin
  • 1 cup heavy cream (for mousse)
  • 1 cup dark chocolate, melted and cooled
  • 1/2 cup heavy cream (for ganache)
  • 1/2 cup dark chocolate, chopped (for ganache)
  • Fresh raspberries for garnish

Instructions

  1. Prepare the raspberry jelly by cooking fresh raspberries and sugar in a saucepan over medium heat until softened. Stir in gelatin until dissolved, then cool and refrigerate to set.
  2. Whip heavy cream until stiff peaks form, then gently fold in cooled melted dark chocolate to create mousse.
  3. Assemble the cake starting with the cooled chocolate cake layer on a platter. Spread half of the mousse over it, followed by a layer of raspberry jelly, then finish with the remaining mousse.
  4. Heat heavy cream for the ganache until simmering, pour over chopped dark chocolate, stir until smooth, then drizzle over assembled cake.
  5. Garnish with fresh raspberries and chill in the refrigerator for at least 2 hours before serving.
