Ingredients

  • Baking spread or unsalted butter
  • Caster sugar
  • Eggs
  • Vanilla extract
  • Self-raising flour
  • Black food coloring
  • Lime marmalade
  • Icing sugar
  • Green and yellow food coloring
  • Candy eyes

Instructions

  1. Preheat the oven to 140C (325F). Line a cupcake tin with cases.
  2. Cream together baking spread and sugar until fluffy. Add eggs and vanilla; mix well. Fold in flour, followed by black food coloring.
  3. Divide batter into cases and bake for 25–30 minutes until a skewer comes out clean. Cool on a wire rack.
  4. Fill cooled cupcakes with lime marmalade mixed with green food coloring.
  5. Prepare buttercream by mixing softened butter, icing sugar, vanilla, milk, and food coloring until smooth.
  6. Pipe or spread the buttercream on top of each cupcake and decorate with candy eyes.
