  • 4 ripe nectarines
  • 8 ounces burrata cheese
  • 8 slices prosciutto
  • 4 ounces cherry tomatoes
  • 2 heirloom tomatoes
  • 1/2 cup fresh cherries
  • 1/2 cup mixed baby spring greens
  • Fresh herbs (oregano, mint, lemon thyme)
  • Extra virgin olive oil
  • Fresh lemon juice

Instructions

  1. Preheat the grill or grill pan over medium-high heat. Slice the nectarines into eighths and brush with olive oil.
  2. Grill the nectarines for 2–3 minutes on each side until they have grill marks and soften slightly. Remove from heat and let cool.
  3. In a small bowl, whisk together lemon juice, white wine vinegar, lemon zest, minced herbs, olive oil, salt, and pepper to make the vinaigrette.
  4. In a large salad bowl, combine mixed greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette. Toss gently.
  5. Top with torn burrata and prosciutto slices. Garnish with fresh herbs and serve immediately.
