  • 6 large yellow or sweet onions
  • 1 lb ground beef (or lamb)
  • 1/2 cup long-grain rice
  • 1 small onion, chopped
  • 4 cloves garlic (2 for filling, 2 for sauce)
  • Fresh parsley
  • Fresh mint
  • Ground allspice
  • Ground cinnamon
  • Crushed tomatoes
  • Broth

Instructions

  1. Boil salted water in a large pot. Prepare onions by trimming tops and bottoms; boil for 10–12 minutes until softened. Cool and separate into cups.
  2. Sauté chopped onion in olive oil, add minced garlic, then cook ground beef until browned. Mix in rice, herbs, spices, salt, and pepper; cool slightly.
  3. Fill each onion cup with the beef-rice mixture; place seam-side down in a greased casserole dish.
  4. For the sauce: Sauté garlic in olive oil, then add crushed tomatoes, broth, oregano, dill, and lemon juice; simmer.
  5. Pour sauce over stuffed onions; cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil and bake for an additional 20–30 minutes until golden.
