  • 240ml vegetable oil
  • 4 large eggs
  • 133g unsweetened applesauce
  • 312g all-purpose flour

  • 260g finely grated carrots

Instructions

  1. Preheat oven to 149°C (300°F) and toast the pecans for 7–8 minutes.
  2. Increase the temperature to 177°C (350°F) and prepare two or three greased cake pans with parchment paper.
  3. In a bowl, whisk together brown sugar, granulated sugar, oil, eggs, applesauce, and vanilla until smooth.
  4. In another bowl, mix flour, baking powder, baking soda, salt, and spices.
  5. Fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  6. Divide batter among prepared pans and bake (20–24 mins for three pans; 30–35 mins for two). Cool completely before removing from pans.
  7. For frosting: beat cream cheese and butter until smooth; gradually add powdered sugar and vanilla until fluffy.
  8. Frost layers of cooled cakes and chill before slicing.
