  • 1 ½ pounds potato gnocchi
  • 1 pound cherry tomatoes
  • 1 ⅓ cup tomato passata
  • 1 garlic clove (minced)
  • Fresh basil leaves
  • 2 cups fresh mozzarella cheese
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper (to taste)

Instructions

  1. Boil water with salt in a large pot over medium-high heat.
  2. In an oven-proof pan, heat olive oil over medium heat, add garlic, and sauté until fragrant.
  3. Add cherry tomatoes; cook for about 5 minutes, crushing some to release juices.
  4. Stir in tomato passata, salt, pepper, and torn basil leaves; simmer for 5 minutes.
  5. Cook gnocchi according to package instructions; strain well.
  6. Toss cooked gnocchi with the sauce in the pan and mix in ⅔ of the mozzarella.
  7. Top with remaining mozzarella and garnish with basil.
  8. Broil until cheese is bubbly and golden.
