  • 2 cups heavy cream
  • 2 cups fresh mint leaves
  • ¾ cup sugar
  • 5 egg yolks
  • 3 cups diced watermelon
  • ⅓ cup sugar (for granita)
  • 1 lemon (juiced)
  • 1 tsp flaked sea salt

Instructions

  1. Make Watermelon Granita: Puree diced watermelon, sugar, and lemon juice in a food processor until smooth. Pour into a shallow dish and freeze. Scrape every 30 minutes for about 3–4 hours until fluffy.
  2. Prepare Mint Ice Cream Base: Heat milk, sugar, and 1 cup cream in a saucepan until bubbles appear. Add mint leaves and steep for 1-2 hours. Whisk egg yolks; reheat milk mixture, then temper yolks by gradually adding the milk mixture before returning it all to the pot. Heat until thickened.
  3. Strain and Chill: Strain the mixture through a fine mesh sieve to remove mint leaves, stir in remaining cream, chill thoroughly.
  4. Churn Ice Cream: Process chilled mixture in an ice cream maker according to manufacturer instructions until creamy.
  5. Serve: Layer mint ice cream and watermelon granita in bowls or tall glasses for a stunning presentation.
