  • 2 cups heavy cream
  • 2 cups fresh mint leaves
  • ¾ cup sugar
  • 5 egg yolks
  • 3 cups diced watermelon
  • ⅓ cup sugar (for granita)

  • 1 tsp flaked sea salt

Instructions

  1. For the granita, puree watermelon, sugar, and lemon juice in a food processor. Transfer to a shallow dish and freeze, scraping every 30 minutes until fully frozen (about 3–4 hours).
  2. To infuse mint flavor, heat milk, sugar, and 1 cup heavy cream until bubbles form. Add mint leaves, cover, and steep for 1–2 hours.
  3. Whisk egg yolks; temper them by gradually mixing in the warm mint mixture. Return to saucepan and heat gently until thickened.
  4. Strain through a fine mesh sieve into a bowl, stir in remaining heavy cream and chill thoroughly before churning in an ice cream maker.
  5. Layer granita and ice cream in serving dishes before serving.
