  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 cups sweet corn kernels (grilled if possible)
  • 4 cups cooked jasmine rice
  • 1/4 cup crumbled cotija cheese
  • 2 tbsp lime juice
  • 1/4 cup sour cream or Greek yogurt
  • Salt and black pepper to taste
  • Optional toppings: avocado, black beans, fresh cilantro

Instructions

  1. Marinate the chicken by mixing lime juice, avocado oil, chili powder, garlic powder (if using), salt, and pepper in a bowl. Add chicken and coat well. Let marinate for 15-30 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for 8-10 minutes on each side until golden brown and fully cooked. Remove from heat and let rest before slicing.
  3. In a separate bowl, combine grilled corn kernels with optional red onion slices, sour cream, mayonnaise, cotija cheese, chili powder, salt, pepper, and lime juice. Mix well.
  4. Reheat jasmine rice if necessary.
  5. Assemble each bowl with a base of rice topped with sliced chicken and street corn mixture. Garnish with additional cotija cheese and fresh cilantro.
