  • 2 fish fillets (cod or tilapia)
  • 6 sprigs thyme (chopped)
  • 3 sprigs rosemary (chopped)
  • 4 garlic cloves (minced)
  • 1 cup cherry tomatoes
  • ½ cup olives (pitted)
  • 1 medium onion (diced)
  • 1 zucchini (diced)
  • ¼ cup olive oil
  • Juice and zest of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a mixing bowl, combine thyme, rosemary, garlic, lemon juice and zest, olive oil, salt, and pepper.
  3. Rub marinade on fish fillets and set aside some for later. Coat vegetables in remaining marinade.
  4. Place marinated vegetables in the baking dish and top with fish fillets. Drizzle remaining marinade over everything.
  5. Bake for about 15 minutes or until fish flakes easily with a fork.
