  • 500 g (4 cups) bread flour
  • 7 g (2 1/4 teaspoons) instant yeast
  • 2 teaspoons kosher salt
  • 480 g (2 cups) lukewarm water
  • 6 tablespoons high-quality extra-virgin olive oil (divided)
  • Flaky salt (for topping)
  • 1 tablespoon chopped rosemary (optional)

Instructions

  1. In a large bowl, mix bread flour, yeast, and kosher salt on opposite sides.
  2. Make a well in the center, pour in lukewarm water, and stir to form a shaggy dough.
  3. Drizzle 30 g olive oil over the dough, coating it lightly, then cover with plastic wrap and refrigerate for 18 to 72 hours.
  4. When ready to bake, preheat the oven to 425°F (218°C). Prepare a greased baking pan and transfer the dough into it.
  5. Let rise in a warm place for 3-4 hours until nearly filling the pan.
  6. Before baking, drizzle remaining olive oil on top and create dimples with your fingers; sprinkle with flaky salt and optional rosemary.
  7. Bake for 25-30 minutes or until golden brown. Cool slightly before slicing.
