  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar (to taste)
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • Optional: 1/2 tbsp minced garlic

Instructions

  1. Rinse and slice cucumbers at an angle for oval-shaped slices.
  2. Sprinkle with salt, mix well, and refrigerate for at least 20 minutes.
  3. Drain excess water from the cucumbers and rinse briefly.
  4. In a mixing bowl, combine sesame oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and optional garlic.
  5. Toss the chilled cucumbers with the dressing until well-coated and serve immediately.
