  • 1 cup salted butter (room temperature)
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend freeze-dried strawberries into a fine powder using a blender.
  3. In a mixing bowl, cream together butter, sugar, and vanilla until fluffy. Beat in the egg.
  4. Gradually add flour, baking soda, half of the strawberry powder, and salt; mix in the strawberry jam.
  5. Form dough into one-inch balls on the prepared baking sheet.
  6. Bake for about 8 minutes; gently flatten with the baking sheet and bake for an additional 2–3 minutes until lightly golden.
  7. For icing: combine cream cheese, powdered sugar, hot milk, remaining strawberry powder; stir until smooth.
  8. Once cookies cool, ice or drizzle icing over them.
