Ingredients

Scale
  • 1 ½ pounds boneless skinless chicken breasts
  • 2 cups dill pickle juice
  • 1 cup dill pickle ranch dressing
  • 810 wooden skewers (soaked in water for 30 minutes)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • fresh dill (chopped for garnish)

Instructions

  1. 1. Marinate the chicken: In a large bowl, combine the chicken and dill pickle juice. Cover and refrigerate for at least 8 hours or overnight.
  2. 2. Prepare seasoning: In a small bowl, mix kosher salt, black pepper, garlic powder, onion powder, and paprika. Toss the marinated chicken in the seasoning until evenly coated.
  3. 3. Assemble skewers: Thread seasoned chicken cubes onto soaked wooden skewers with space between each piece.
  4. 4. Brush with dressing: Generously brush half of the dill pickle ranch dressing over the skewers.
  5. 5. Preheat air fryer: Heat to 400°F and lightly spray the basket with nonstick spray.
  6. 6. Cook skewers: Place in the air fryer basket in a single layer and cook for 11-12 minutes, flipping halfway through until internal temperature reaches 165°F.
  7. 7. Final touches: Brush remaining dressing on cooked skewers and serve hot.
