  • 1 ½ cups graham cracker crumbs
  • ¾ cup unsalted butter (melted)
  • 16 oz full-fat cream cheese (softened)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine graham cracker crumbs, flour, sugar, and salt. Stir in melted butter until mixed.
  3. Press two-thirds of the crumb mixture into the bottom of the prepared dish.
  4. In another bowl, beat cream cheese until smooth. Gradually mix in sugar and add eggs one at a time.
  5. Blend in lemon zest, lemon juice, and vanilla until smooth. Pour over the crust and sprinkle with remaining crumbs.
  6. Bake for 30–35 minutes until the center is set but slightly jiggly. Allow to cool before refrigerating for at least three hours.
  7. Slice into bars and serve chilled.
