  • 4 cups (1 liter) chicken or beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 cup small pasta (such as ditalini or elbow macaroni)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach or basil, chopped
  • Extra Parmesan cheese for serving
  • Fresh basil or parsley for garnish
  • Crushed red pepper flakes for an optional kick

Instructions

  1. In a mixing bowl, combine ground meat, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix gently and form into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides; set aside.
