  • 2¼ cups (15¾ ounces) sugar
  • 1¼ cups (3¾ ounces) baking cocoa
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon instant espresso powder
  • 1 tablespoon vanilla extract
  • 4 large eggs
  • 1 cup (4¼ ounces) all-purpose flour
  • 2 cups (12 ounces) bittersweet chocolate chips or chopped chocolate
  • 1 pound cream cheese, room temperature
  • ¾ cup (5¼ ounces) sugar
  • ⅓ cup (1½ ounces) all-purpose flour
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • 2 teaspoons vanilla extract
  • ¼ cup heavy cream
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by lining it with parchment paper.
  2. In a large saucepan, melt the butter over medium heat. Stir in sugar until glossy, then mix in cocoa powder, salt, baking powder, espresso powder, and vanilla extract. Let cool slightly before whisking in eggs and flour until smooth.
  3. For the cream cheese batter, beat the room temperature cream cheese until smooth; add sugar, flour, cornstarch slurry, vanilla extract, heavy cream, and eggs until well combined.
  4. Fold chocolate chips into the brownie batter. Spread half of it into the prepared pan, pour three-fourths of the cream cheese batter on top. Add remaining brownie batter and swirl with a knife if desired.
  5. Bake for 35 to 45 minutes or until a toothpick comes out almost clean. Allow cooling completely before cutting into squares.
