  • 1 tbsp instant coffee
  • 200g granulated sugar
  • 210g all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • ½ tsp salt
  • 120g sour cream (room temperature)
  • 75g vegetable oil
  • 2 large eggs (room temperature)
  • 1 ½ tsp vanilla extract
  • 200g butter (for frosting)
  • 330g powdered sugar
  • 45 tsp black brewed coffee (cooled down to room temperature)
  • 1 1/2 tsp instant espresso powder (optional, for more intense coffee flavor)
  • Coffee beans (for decoration)

Instructions

  1. Preheat oven to 175°C (350°F) and line a cupcake pan with liners.
  2. Dissolve instant coffee in hot water and set aside to cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, cream butter and sugar until fluffy, then mix in eggs, sour cream, oil, vanilla extract, and cooled coffee.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. Fill cupcake liners two-thirds full and bake for about 22 minutes or until a toothpick comes out clean.
  7. Cool completely before frosting with the prepared coffee buttercream.
