  • 226 grams unsalted butter (room temperature)
  • 100 grams granulated sugar
  • 26 grams brown sugar
  • 2 egg yolks (room temperature)
  • 100 grams dark chocolate
  • 60 grams heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine flour, cocoa powder, and salt in one bowl; set aside.
  3. Cream butter with granulated and brown sugars until light and fluffy. Add egg yolks and vanilla; mix well.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Roll dough into 1-inch balls and place on a lined baking sheet. Create indents in each ball using your thumb.
  6. Bake for about 10 minutes; let cool briefly on the sheet before transferring to a wire rack.
  7. For the ganache, heat dark chocolate and heavy cream until melted and smooth; stir in cold butter until glossy.
